The top surface is polished to a high shine, and the four corners are rounded. The top and bottom edges are chamfered to prevent injury.
Natural marble has high thermal conductivity and low specific heat capacity, making it cool to the touch. This helps to suppress the temperature rise of dough, preventing it from becoming sticky. It is highly useful for kneading dough for pizza, bread, pies, pastries, and for confectionery work with chocolate.
