Katsuobushi (bonito flakes) shaver Iroribata Umami using Fujishuu blade.
This is a professional-grade shaver with a box made of ash wood and a plane base made of oak.
The Fujishuu katsuobushi plane blade is a steel-bonded blade, which ensures excellent sharpness.
The sensation of shaving is gentle and soft.
While the box is made of ash wood and the blade is a Fujishuu blade, similar to our Katsuo-bako Katsuo no Sato product, this item has a smaller box and an oak plane base.
The shaved flakes can be used as a natural topping for rice or added to miso soup to enhance the flavor – highly recommended!
The flower-shaped shavings are a perfect accompaniment to tofu or blanched vegetables! Also highly recommended for egg-on-rice.
Katsuobushi is divided into Osebu (male/back section) and Mese (female/belly section).
One bonito yields a total of four katsuobushi: Osebu x 2 and Mese x 2.
Osebu (male/back section)
When made into katsuobushi, it has relatively little distinct flavor and a stable taste.
It is easier to shave with Osebu if you are not yet accustomed to shaving.
Mese (female/belly section)
Being from the belly, it has more oil content and tends to become powdery when shaved.
However, many people prefer the taste of Mese, so please enjoy shaving Mese as well.
We encourage you to experience the distinct flavors of both Osebu and Mese.
