Sabaki Special (Tosa Kuro-uchi Deba Knife) Standard (Aogami #2) M Size Whetstone
I supported and purchased this item on Makuake about a year ago for the purpose of preparing fish I caught. I used it a few times, but no longer need it, so I am selling it.
It has been sharpened several times. There are also some areas with rust. Please refrain from purchasing if you are sensitive about such details.

About this product
Tosa, famous for its free-forged blades with over 400 years of history, faces the Pacific Ocean and is a region where a wide variety of fish can be caught due to the Kuroshio Current. Historically, double-edged blades that are easy to use have been the mainstream for preparing fish in general households.
Unlike the conventional plastic handle, this knife features an all-wood handle with a plywood ferrule, giving it a luxurious feel. It is also octagonal for easy grip angle fixation.
When the ferrule is made of plastic, it is attached to the handle with adhesive, and the wood can absorb moisture and detach after a few years of use. However, this product is made entirely of wood, making it less likely to detach and enhancing its stylish appearance compared to conventional products.
Typical filleting knives are often single-edged with a blade length of about 12cm and are used for gutting squid and preparing small fish.
While deba and sashimi knives are often thought of as single-edged, they are difficult to cut straight and are ideally suited for professional chefs. Did you know that double-edged knives are actually more suitable for general use?
This Sabaki Special is designed to handle medium to large fish. Through repeated prototyping and testing of various combinations of thickness, blade width, and shape, we have arrived at this uniquely developed product that can be used for everything from filleting to sashimi.
