When lightly boiled, it develops a slimy texture and feel similar to seaweed, and is known for its extremely high nutritional value.

Also known as Yunnan Hyakuyaku (Hundred Medicines of Yunnan), it is extremely rich in magnesium, calcium, zinc, folic acid, vitamin A, and more.
How to Eat: Not only the leaves but also the stems and tubers (mucilage) can be eaten. Lightly boil in boiling water for about 10-15 seconds and then rinse in cold water to bring out its beautiful green color and sliminess.
Recommended Recipes: Perfect for boiled and seasoned dishes, dressed dishes, vinegared dishes, and as an ingredient in miso soup.
How to Grow:
