Jicama is known by various other names such as Yam Bean, Kudzu Root, Manguey, Mexican Turnip, Bangkuang, and Pachinga. Although it is a legume, the part that is eaten is the underground tuber (which looks like a giant potato). It is not very common in Japan, but it is an important vegetable frequently consumed in Central and South America and Southeast Asia.

It is characterized by its high water content and crisp texture. When peeled like a potato, a white, translucent flesh appears, similar to a pear. It has little bitterness, so it does not discolor and has a pleasant crunchy texture when eaten raw. It can be added to salads, soups, and stir-fries to add rich texture and flavor to dishes.

It is rich in dietary fiber and vitamin C, and is a low-calorie, nutrient-dense root vegetable. It has many health benefits, including aiding digestion and supporting the immune system and heart health.
